Have you seen the kitchen gadget the “Veggetti”? It’s my new best friend. It really is a life changer if you are trying to do a healthy diet, especially if you are trying to do gluten free. My friend Val from My Virtual Vineyard introduced me to the veggetti when she had me over for lunch and made amazing zucchini noodles.

My beloved Veggetti
After some experimenting with various veggies I have found that zucchini and cucumber are the things that work best in the veggetti but you can use any squash, carrot, potato or other hard veggie you can think of.

Making zucchini “noodles” is super easy with the Veggetti
Today I made my own version of zucchini veggetti. This is my easy, ready in five minutes recipe.
Fresh Veggetti
1 medium zucchini, made into “noodles”
1 tomato, chopped
2 cloves garlic, chopped
1-2 tablespoons olive oil
1 scallion, chopped
fresh cilantro, chopped
seasoning of your choice (I used my homemade sazon – you can see my recipe in this guest post on Parenting Chaos)
Heat oil in a large frying pan. Add garlic, tomato, zucchini and seasoning. Cook about 5 minutes, then add scallion and cilantro and cook a few minutes more.
This recipe will serve 2 and can be easily doubled to feed the whole family.

Voila! That’s all you need to make a fresh, healthy and delicious dinner in less than 10 minutes! You can have fun experimenting with different herbs and spices, chopped veggies, etc. What veggie would you like to use as a “noodle”?
